Chia Pudding & Nice Cream
Have you ever tried banana nice-cream? It is better than ice-cream, and it may be one of my biggest addictions. It is quick and easy to make, fulfills all cravings, and keeps your stomach satisfied. Most importantly, it is free of chemicals, animal products, unnatural sugars, and processed ingredients.
Bananas are my favorite breakfast fruit and are a great substitution in a vegan diet. Aside from being sweet and easy to digest, they are high in potassium and have a high glycemic index— perfect for a boost in energy and muscle function after a workout!
If you don’t know, chia seeds are a power food with great benefits. Simply put they provide you with a clear mind, great bone health, and consistent energy levels. The seeds contain fiber, calcium, protein, and magnesium omega-3 acids. Bodybuilding.com says that each 2 tbsp serving of chia offers 5 times the omega-3 content of 1/4 cup of walnuts, twice the iron and magnesium of a cup of spinach, as much calcium as a half-cup of milk, and more than twice the fiber of a cup of oatmeal. Ditch the dairy.
Lastly, coconut helps speed up your metabolism and keep your energy levels up for longer!
Chia Pudding (batch):
3/4 cup chia seed
4 cups almond milk
2 teaspoons or vanilla (or more to taste)
2 teaspoons of your choice: stevia sugar, maple syrup, or a couple of dates
When making a large batch, mix the ingredients on a low setting in your blender. Once the ingredients are mixed well, transfer them into a mason jar and store in the refrigerator. The chia seeds with expand in size and change texture!
Banana Nice-cream (single serving):
Splash of almond milk
Splash of coconut water
1 teaspoon of almond butter (optional)
Drop of hazelnut stevia (optional)
It’s all about your creativity from here. Layer the vanilla chia seed pudding and banana nice cream, then top with fruit and coconut flakes!
