Organic Carrot Soup

1 teaspoon coriander 

1/2 teaspoon ground mustard seeds

3 tablespoons extra virgin olive oil 

1/2 teaspoon curry paste (or powder) 

1 chopped onion 

1 tablespoon fresh ginger 

1 1/2 teaspoons fresh grated lime peel 

1 can 15 oz organic (no salt) diced tomatoes 

4-5 cups organic vegetable broth (optional: add 2 cups water)

4 cups organic diced carrots 

2-3 teaspoons fresh lime juice

1. Heat oil in large stock pot

2. Grind coriander and mustard seeds to powder and add to oil with curry powder

3. Add ginger and sauté for a minute 

4. Add onions and sauté for 3-4 minutes

5. Add fresh grated lime peel

6. Add organic diced tomatoes 

7. Add diced carrots

8. Add broth and bring to a boil, then simmer 

9. Transfer soup to Vitamix to blend and garnish
